The ideal candidate will have extensive experience in steakhouse cuisine, particularly in working with open fire and grilling techniques, and a commitment to delivering exceptional dining experiences for our guests.Key Responsibilities:
- Lead and manage all kitchen operations, focusing on the preparation and cooking of premium steaks and other high-quality meats using open fire methods.
- Create and design innovative menus that highlight the best cuts of meat and other signature dishes, while maintaining a consistent, high standard of quality.
- Supervise and train kitchen staff, ensuring they are proficient in cooking techniques, particularly with open flame and grill preparation.
- Ensure all food is prepared to the highest standards of taste, texture, and presentation.
- Maintain inventory of ingredients, manage ordering, and ensure proper storage of perishable items.
- Oversee kitchen cleanliness, organization, and adherence to health and safety regulations.
- Control food costs, monitor portion control, and ensure efficient use of ingredients.
- Work closely with front-of-house management to ensure smooth operations, timely service, and guest satisfaction.
- Handle guest feedback, addressing any issues related to food quality or service with professionalism and urgency.
- Keep up-to-date with industry trends and new grilling techniques, incorporating innovative ideas to improve the menu.
Requirements:
- Proven experience as a Head Chef or Sous Chef in a high-end steakhouse or similar fine dining establishment.
- Expertise in grilling and cooking with open fire, including wood or charcoal grilling techniques.
- Strong leadership skills with the ability to manage, mentor, and motivate a team of kitchen staff.
- A deep understanding of premium cuts of meat and the ability to cook them to perfection.
- Exceptional organizational and time-management skills, with the ability to handle a high-pressure environment.
- Excellent communication skills and the ability to work collaboratively with both the kitchen and front-of-house teams.
- Strong knowledge of food safety and hygiene standards.
- Culinary qualification (preferred but not required).
